Chicken with Mushroom and Balsamic Cream Sauce

 I have to say that I was more than pleasantly surprised by this dish.  It had the most mushrooms I think I have ever purchased at one time and was worth every single fungus!  I loved it!


Ingredients:

  • Salt & Pepper
  • 8 oz. Orzo Pasta
  • 2 Tablespoons Olive Oil
  • 4 boneless, skinless Chicken Breasts
  • 2 Tablespoons Butter
  • 12 Cremini or Baby Portobello Mushrooms, sliced
  • 12 Shiitake Mushrooms, stems removed and sliced
  • 12 White Mushrooms, sliced
  • 3 cloves of Garlic, minced or pressed
  • 1 Tablespoon fresh Thyme leaves, chopped
  • 2 large Shallots, thinly sliced
  • 2 Tablespoons Flour
  • 1 ½ Cup Chicken Stock
  • 1 Tablespoon Balsamic Vinegar
  • 3 Tablespoons Heavy Cream or Half-n-Half
  • ¼ Cup chopped Flat Leaf Parsley (Italian Parsley)

Preparation:


            First, heat a large pot of salted water to boil and add the Orzo Pasta.  Cook the Pasta until al dente.

            Next, preheat a nonstick skillet over medium-high heat and add the Olive Oil.  Season the Chicken Breasts liberally with Salt and Pepper and add to the preheated skillet.  Cook the Chicken for 5-6 minutes on each side.  Remove the Chicken from the pan and cover with foil to keep warm.



            Return the skillet to the stove and reduce the heat to medium.  Add the Butter and melt.  Once the Butter is melted, add the ‘Shrooms and brown, stirring occasionally for 4-5 minutes.  Now season the ‘Shrooms with Salt and Pepper and then add the Garlic, Thyme and Shallots.  Cook, stirring occasionally for around 2 minutes or until the Shallots are wilted.  Sprinkle the flour into the pan, stir, and cook 2 minutes more.  Whisk in the Chicken Stock, Balsamic Vinegar, and Cream.  Turn the heat to high and simmer for 2 minutes, or until the sauce is thickened.

                 
                        So good!  Any chance to use Orzo and I'm down.  Hopefully you enjoy this as much as I did!  P.S. - another freezer ready dish. :)

Italian Sausage, Onions and Peppers


Don’t you just love quick and easy meals?  This is one of them and so yummy to boot!  It has so many things I love – sausage, onions, peppers, garlic, pasta and wine.  How could this be wrong?

Ingredients:

  • 5 Sweet Italian Sausage Links
  • 2 Tablespoons Butter
  • 1 Yellow Onion, sliced
  • ½ Red Onion, sliced
  • 4 cloves of Garlic, minced or pressed
  • 1 Red Bell Pepper, sliced
  • 1 Green Bell Pepper, sliced
  • 1 Teaspoon dried Basil
  • 1 Teaspoon dried Oregano
  • ¼ Cup White Wine

Preparation:

            First heat a skillet over medium heat and add the Links, browning all sides. 




            Remove the Links and slice – set aside.



            In the same skillet, melt the Butter.  Add in the Onions, Garlic and cook for 2-3 minutes.  Stir in the Green and Red Bell Peppers.  Season with the Oregano and Basil.  Stir in the White Wine and continue to cook until the Peppers and Onions are tender.



            Return the sliced Links to the skillet with the vegetables.  Reduce the heat to low, cover, and simmer for 15 minutes.



            I served this over a bed of bowtie pasta and it was scrumptious!  L'amore si!

Pork Tenderloin with Garlic-Orange Vinaigrette and Wilted Spinach

I love to mix things up and this recipe certainly caught my attention.  It combined a lot of ingredients I absolutely adore, but had never thought to combine.  And as an added bonus, the left-over orange juice came in super handy for the cold that Aquaman gave me!  Thanks darling.


Ingredients:

  • 4 Tablespoons Olive Oil, divided
  • 2 – about 1 lb. each, Pork Tenderloins, trimmed and patted dry
  • ¼ Cup of O.J.
  • 2 Tablespoons Dijon Mustard
  • 1 Tablespoon Honey
  • 2 cloves of Garlic, minced or pressed
  • 4 Bunches – just about 2 Pounds Baby Spinach
  • Salt & Pepper




Preparation:

            In a large skillet, heat 1 tablespoon of Olive Oil over medium heat.  Season the Pork Tenderloins with Salt and Pepper.  *I was unable to find 2 – 1lb. Tenderloins, so in my resourcefulness, I cut a 2lb Tenderloin in half length wise.  I cut each half in half again to make it easier to fit in the skillet – just my personal preference.    

            Add the Tenderloins to the skillet and cook, turning occasionally, until a meat thermometer registers 145 degrees, just about 20-25 minutes.  If the Pork cooks too quickly, reduce the heat.  Transfer the Pork to a plate and tent loosely with foil and let rest 10-15 minutes.  Make sure to reserve the skillet.



            Next make the vinaigrette.  In a blender, or food processor, combine the O.J., Mustard, Honey, Garlic and 2 tablespoons Olive Oil.  Season the vinaigrette with Salt and Pepper and blend until smooth – set aside.



            In the same skillet, heat the remaining 1 tablespoon of Olive Oil over high heat.  Add as much of the Spinach that fits, toss until wilted, adding more as there is room-just about 3-5 minutes total.  Drain off the excess liquid and season the Spinach with Salt and Pepper.

            To serve, slice the pork and lay on a bed of the wilted Spinach and drizzle with the vinaigrette.



            So lovely!  The flavors literally meld together and create the perfect dish.  If you love pork, this is a recipe you don’t want to miss.

White Chicken Lasagna


So I’m sure there’s a million different ways to prepare lasagna, but this has to be one of my favorites.  This recipe came to me via the best Christmas present ever, “Tailgating Indy Style 2010 Cookbook.”  Thanks to Mr. & Mrs. Courthouse Canoodlers for driving all over the city just to get it.  And by the way, the automatic wine opener is so money – although it may be my new enabler.

Ingredients:

  • 9 Lasagna Noodles
  • ½ Cup Butter
  • 1 White Onion, chopped
  • 2 Cloves of Garlic, minced or pressed
  • ½ Cup Flour
  • 2 Cups Chicken Broth
  • 1 ½ Cup of Milk
  • 4 Cups of Mozzarella, divided
  • 2 Cups Parmesan, divided
  • 2 Cups of Ricotta Cheese
  • 1 Teaspoon dried Basil
  • 1 Teaspoon dried Oregano
  • ½ Teaspoon ground Black Pepper
  • 2 Cups cooked, cubed, or shredded Chicken
  • 2 – 10oz. packages of frozen, chopped Spinach, thawed and drained

Preparation:

            First, preheat your oven to 350 degrees and bring a large pot of slightly salted water to boil.  Cook the Lasagna Noodles for 8-10 minutes, drain and rinse them under cold water, then set aside.

            To make the sauce, melt the Butter in a large saucepan over medium heat.  Add the Garlic and Onion and cook until tender, stirring frequently.   




           Now go ahead and add in the flour and salt, and stir for about a minute.  Add the Chicken Broth and Milk and bring to a boil, stirring constantly. Next stir in 2 cups of the Mozzarella and ¼ cup of the Parmesan, until smooth. Season the sauce with the Basil, Oregano, and ground Black Pepper and set aside.

            In a 9X13 baking dish, spread 1/3 of the sauce mixture along the bottom.  Layer with 1/3 of the Lasagna Noodles, then the Ricotta and Chicken*.  (I choose to use rotisserie Chicken that I shredded – eliminating a step and I think it adds a depth of flavor!)  




            Arrange another 1/3 of the Noodles over that layer and top with 1/3 of the sauce, the drained Spinach and sprinkle with the remaining 2 cups of Mozzarella and ½ cup of Parmesan.  Arrange the remaining Noodles over the cheese layer and spread the remaining sauce and sprinkle with the last ½ cup of Parmesan.





            Bake the Lasagna for 35-40 minutes, until the Parmesan begins to turn a lovely golden brown.





            This dish is too good to be true!  It’s tasty, hearty and perfect for the cold winter months.  Bonus- it feeds a bunch and freeze very, very well.  C’est tres bon!

Balsamic and Wine Glazed Steak plus the Best Green Beans Ever!

Balsamic and Wine Glazed Steak

On my continual quest to incorporate mushrooms into my cooking, I stumbled upon this recipe.  I mean steak, balsamic vinegar, and wine – how can this be wrong?


Ingredients:

  • 2 Teaspoons Cooking Oil
  • 1 Pound boneless Beef Top Loin or Top Sirloin Steak, cut into ½ - ¾ inch thick strips
  • 3 Cloves Garlic, minced
  • 1/8 Teaspoon Crushed Red Pepper Flakes
  • ¾ Cup dry Red Wine
  • 2 Cups sliced, fresh Mushrooms
  • 3 Tablespoons Balsamic Vinegar
  • 2 Tablespoons Soy Sauce
  • 4 Teaspoons Honey
  • 2 Tablespoons Butter

Preparation:


            In a large skillet, heat Oil over medium-high heat.  Add the Steak strips and reduce the heat until medium.  Cook for 10-13 minutes, or until the Steak reaches desired done-ness, turning meat occasionally.  Once cooked, transfer the Steak to a platter and keep warm.




            Next add the Garlic and Red Pepper to the skillet and cook for 10 seconds and remove skillet from heat.




            Carefully add the Red Wine, return skillet to the heat and boil for 5 minutes or until most of the liquid has evaporated.  Now add the Mushrooms, Vinegar, Soy Sauce, Honey and return mixture to a simmer.  Cook for 4 minutes or until the Mushrooms are tender.  Lastly stir the Butter into the skillet until melted.  Spoon the Sauce over the Steak.  Oh-so-yummy – this dish is hearty with a slight tanginess that is simple, elegant and delicious to boot!






Best Green Beans Ever

So this recipe is courtesy of Aquaman’s mother and I could not be more thankful!  I request it at every holiday and could eat it everyday without fail.  Try it and see if you don’t agree…

Ingredients:

1 Pound Green Beans, ends snapped off, washed and drained
1 Onion, chopped
3 ½ Tablespoons Bacon Pieces
1-2 Tablespoons Liquid Smoke – mesquite variety





Preparation:


            First, bring a large pot of salted water to boil.  Add the Green Beans and boil until tender, about 10-15 minutes.




            Drain the Beans and return to the same pot.  Toss in the Onion, Bacon and Liquid Smoke.  Stir to combine and this side is ready to serve. 





I love the smoky flavor and crunchiness of the Onion.  This dish is almost too good to be true.

Jenn's Chicken Parmesano Supreme and Classic Asparagus Saute


Jenn’s Chicken Parmesano Supreme


I love the idea of taking a traditional recipe and tweaking it just a little to give a jaded meal a new, interesting kick.  I found this recipe online and just had to try it.  I was not disappointed and you won’t be either…


Ingredients:

  • 4 skinless, boneless Chicken Breasts – lightly pounded to an even thickness
  • 3 Tablespoons all-purpose Flour
  • 1 Egg, beaten
  • 1 Cup of Breadcrumbs
  • ¼ Cup Vegetable Oil
  • 1 ½ Cups Spaghetti Sauce*
  • 4 Tablespoons Caesar Salad Dressing
  • 1 Cup shredded Mozzarella Cheese*
  • ½ grated Parmesan Cheese
  • Salt and Pepper to taste

* I used a little more Spaghetti Sauce, probably closer to 2 Cups.  I also upped the amount of Mozzarella Cheese to 2 Cups.




Preparation:

            First preheat your oven to 375 degrees.  Season the Chicken with Salt and Pepper.  Dredge each piece of Chicken in the Flour, and then dip in the beaten Egg, and lastly coat with the Breadcrumbs.  Make sure each piece is evenly and thoroughly coated.

            Heat the Vegetable Oil in a large skillet over medium-high heat.  Cook the Chicken about 3-5 minutes, until it’s no longer pink on the inside. Remove from heat.



            Pour half of the Spaghetti Sauce in a glass baking dish.  Lay the Chicken pieces on the sauce.  Add the remaining Sauce over all the Chicken pieces.  Spread one Tablespoon of the Caesar Dressing to each Chicken piece.  Sprinkle the entire dish with the Parmesan and Mozzarella cheeses.



            Bake the dish for approximately 15 minutes, until heated through and the cheese is melted.




            This dish is hearty, filling and the Caesar dressing gives it a delicious added dimension.  I served this with spaghetti and loved every minute of it!



Classic Asparagus Saute


Ingredients:

  • 1 bunch fresh Asparagus – about 1 Pound
  • 3 Tablespoons Olive Oil
  • 1 Tablespoon minced Garlic
  • 3 Tablespoons Parmesan
  • Salt and Pepper to taste

Preparation:

            First, rinse the Asparagus and pat dry.  Cut off the rough ends.  Next heat the Olive Oil in a skillet over medium-high heat.  Add the minced Garlic and the Asparagus.  Cook for 10 minutes, stirring occasionally.



            Remove from the heat and sprinkle the spears with Parmesan and Salt and Pepper before serving.  Simple, classic and oh-so-yummy!!

Saucy Pepper Steak Stir Fry

This recipe caught my attention because it combines a lot of ingredients I love and its super simple.  Plus I just love beef.  If you’re more of a chicken person, that’s great, but I absolutely adore cow and this quick recipe was my fix for a scattered weekday evening.


Ingredients:

  • 1 Green Bell Pepper, cut into strips
  • 1 Red Bell Pepper, cut into strips
  • 1 Yellow Bell Pepper, cut into strips
  • 1 small White Onion, cut into strips
  • 2 Cloves Garlic, minced
  • ½ Teaspoon Black Pepper
  • 3 Tablespoons Soy Sauce
  • ½ Cup BBQ Sauce
  • 2 Cups cooked Brown Rice
  • 1 Pound Beef Sirloin Steak, trimmed and cut into strips

Preparation:

            Spray a large, nonstick skillet with cooking spray and heat over medium-high heat.  Add the Bell Pepper and Onion strips.  Cook, stirring occasionally for 6 to 8 minutes until the veggies are tender crisp.  Transfer them to a bowl and keep warm.





            Add the Sirloin, Garlic and Pepper to the same skillet; cook and stir about 3 minutes.  Next add the Soy Sauce and cook 1 minute until the meat is cooked through.  Add the BBQ sauce and cook until heated through.  Add back in the veggies and toss to coat.





Use the rice to make the perfect bed and spoon the meat, veggie mixture over top.  And you're done.  Quick, simple and absolutely delicious!

The Much Requested Zuppa Tuscana

This is hands down my most favorite soup ever and yes I do mean ever!  It may be pessimistic to say, but I do not believe I will ever have any other soup that will make me smile wider than this one.  I’ve tried several variations of this beloved Olive Garden soup, but I feel this is the best and probably the closest approximation to the original recipe.  I guarantee one spoonful and you’ll thank me!


Ingredients:

  • 1 Pound Ground Italian Sausage
  • 1 ½ Teaspoon Crushed Red Pepper Flakes
  • 1 Large White Onion, diced
  • 4 Tablespoons Bacon Pieces
  • 2 Teaspoons Garlic, finely minced or pressed
  • 10 Cups of Water
  • 5 Chicken Bouillon Cubes*
  • 1 Cup Heavy Cream
  • 3 Large Russet Potatoes, diced
  • ¼ - ½ Bunch of Kale, torn into smaller pieces (about 1-2 inches)

Preparations:

            In a large pot, sauté the Sausage and Crushed Red Pepper.  Once cooked, drain the excess the fat, remove to a plate and refrigerate while you prepare the other ingredients.  




            In the same large pot, sauté the Onions, Bacon, and Garlic for about 15 minutes – just until the Onions are soft.




            Mix together the Chicken Bouillon and Water.  *I prefer to use a bouillon paste, specifically “Better than Bouillon.”  They make several different kinds, beef, chicken etc.  I liken it to liquid gold and highly recommend you try it.  I think it gives a much richer, robust flavor overall.  If you do decide to go this route – I usually heat 2 cups of water to boiling in the microwave and add 2 Tablespoons of the Better than Bouillon to the hot water and stir to combine.

            Add the Water and Bouillon to the pot with the Onions, Bacon and Garlic.  Bring this to a boil and add the Potatoes.  Cook until soft, just about ½ an hour.




Once cooked, add the Heavy Cream to the pot and cook until thoroughly heated.  Now add back in the Sausage and stir to combine. Add the Kale just before serving and stir.




If you don’t fall in love with this soup and offer homage to the soup Gods, just stop reading this blog now.  There will be nothing else that I can offer you and that just makes me sad, sad, sad.  But then I think about this soup and I’m over it!

Beef and Mushroom Stew

Have I told you how much I love beef?  Yes?  Well I’m gonna do it again, just in case you’ve forgotten.  I LOVE beef.  This is a gorgeous recipe and it tastes heavenly too!  I am continuing down my path to finding a new love for mushrooms and in this dish I believe I’ve found my nirvana.

Ingredients:

  • 2 Pounds Sirloin, cut into cubes
  • 4 Tablespoons Flour
  • 4 Tablespoons Butter
  • 2 Tablespoons Olive Oil
  • 3 Large Shallots, minced (the original recipe called for only 2)
  • 4-5 Cloves of Garlic (the original recipe called for 3, but I bumped that # up)
  • 8 Ounces Cremini or White Button Mushrooms, I recommend at least halving them
  • ½ Cup Red Wine
  • ½ Can Beef Consomme
  • 2 Sprigs fresh Thyme
  • Salt and Pepper to taste
  • Pasta, cooked and drained

Preparation:

            First add 2 Tablespoons of Flour to the Sirloin cubes and toss to coat.  Next melt the Butter and Olive Oil in a large pot or skillet.  Add the meat in batches and sear, removing them to a plate when browned.  Now add the Shallots and Garlic to the skillet and sauté for 2 minutes over medium-low heat.  Add the mushrooms and cook for a further 2 minutes. 

            Add the Consomme and Wine and ½ can of Water using the Consomme can.  Add Salt and Pepper and taste, adding more if necessary.  Bring the mixture to a boil and add back the Sirloin cubes.  Reduce the skillet heat to low and add the Thyme sprigs.



Cover the skillet and simmer for 30-45 minutes.  After cooking that amount of time, mix the remaining 2 Tablespoons of Flour with a little water and add it to the stew.  Stir and allow the stew to cook and thicken for another 10 minutes.  Remove the skillet from the heat and let the stew rest for 15-20 minutes before serving to allow the flavors to deepen.



OMG, I love this stew.  I can’t say one bad thing about it.  It is absolutely glorious.  I chose to serve mine with wide egg noodles and it was totally worth it.  Plus, this freezes and reheats quite well.  Do not miss out on this oh-so-yummy meal!

Lemon and Shrimp Scampi Pasta

So, personally I’m not big on seafood, something that has irked Aquaman for years.  He has literally made me try just about every fish, crab and lobster known to man, to no avail.  At this point the only seafood I touch is shrimp and sushi (odd I know that I’ll eat raw fish, but not cooked).  Part of my mission in maintaining this blog is to broaden my own culinary tastes, so stay tuned, I may find the bravery to attempt seafood other than shrimp.

 Look how pretty those are!

I love, love, love this dish.  It reminds me of the Scampi Damian from Carrabba’s, which incidentally is unavailable in land-locked Indiana.  This recipe is a wonderful blend of the tartness of the lemon, the heat from the red pepper flakes and the pungent flavor of garlic.  I want it, want it, want it and so will you!!


Ingredients:

  • 6 Cloves of Garlic, pressed or grated
  • 2 Lemons, juiced and zested
  • 5 Tablespoons Olive Oil
  • 1 Teaspoon Red Pepper Flakes
  • ¾ Pound Medium Shrimp (21-25), peeled, deveined and butterflied (Reserve the shells)
  • ¼ Onion, thickly chopped
  • ¾ Pound Linguine
  • 2 Tablespoons Butter
  • 1 small bunch of Parsley, chopped

Preparation:

            In a bowl, combine the Garlic, Olive Oil, Red Pepper Flakes, zest and juice of 1 Lemon and Salt and Pepper to taste.  Mix the ingredients and add the peeled, deveined and butterflied Shrimp, stir to coat and set aside.  **I would recommend stirring these occasionally to make sure all the Shrimp have their fair share in the marinade. 



            Next make your shrimp stock.  In a pot, over medium heat, add the Shrimp Shells and Onion.  Cover them with water and bring to a boil.  Reduce to a simmer and cook for 20 minutes.  Strain the pot into a bowl and throw out the Shrimp Shells and Onion.



Meanwhile, bring a large pot of salted water to boil.  Add the Linguine and cook until just tender, about 2 minutes less than package instructions.  Drain the Linguine and reserve ½ Cup of the cooking water.

            Now, heat a large skillet over high heat.  Add the shrimp and cook until they turn pink and begin to caramelize, just about 3 minutes.  Remove the shrimp form the skillet to a plate and add the remaining marinade to the pan.  



Let the marinade cook for a few minutes and then add the reserved 1 Cup of Shrimp stock and the ½ Cup reserved Pasta water.  Continue to cook until the sauce reduces by half.  Add the zest and juice of the remaining Lemon, the Butter and the Parsley and stir to combine.  Taste and add Salt and Pepper as desired.  Add back in the Shrimp and Linguine and toss to combine.  Plate and serve immediately.



            This dish is just divine!  It combines some of my most favorite things and takes less than 30 minutes start to finish.  That makes me one very happy gal!

            By the way, I recently purchased a new kitchen tool that I highly recommend.  Did you get that?  I highly, highly recommend a garlic press.  It saves immeasurable amounts of time if you're a garlic fan and use it regularly.
